A brand spanking new arrival is local celeb chef Sam Leong’s fine dining restaurant Forest (supposedly just a happy coincidence that his wife’s name is also Forest), which opened on February 16 at the new Equarius Hotel in Resorts World Sentosa. Expect modern Chinese fare, an open-concept kitchen and a stunning space that comfortably seats 150 hungry diners.
The best way to sample chef Leong's creations? Simply order the eight- ($180) or ten-course ($250) discovery menus, featuring dishes like hot and sour seafood soup with Hokkaido uni (sea urchin).
