The No. 7 pick at BK Magazine’s Top Tables 2022, Resonance, is putting on a special mixup with Peruvian chefs Jorge Muñoz and Francesca Ferreyros.
 
From Jul 6-7 next week, Chef Shunsuke will collaborate with the two Peruvian chefs for a 10-course tasting menu (B6,900). Chef Jorge’s dishes will be decided on the day after a visit to a local market, and Chef Franscesca will ply her trade with Thai crispy flower with yellow curry manjar blanco and coconut ice cream. Resonance’s Chef Shunsuke will serve buckwheat crepes with anago fritto, grilled eggplant, and summer pickled vegetables.
 
Chef Jorge Munoz has worked in fine dining and Michelin-star restaurants in Spain and Chef Francesca Ferreyros is the owner and chef of Baan in Peru as well as the three Michelin star El Celler de Can Roca team in Spain and Bangkok’s own Gaggan.
 
The “boundless cuisine” of Resonance’s own Shunsuke Shimomura and his “Boundless Cuisine” has made a quick reputation on Bangkok’s own dining scene with a style that endeavors to create a modern fine-dining menu without the confines of region-specific techniques or recipes. Formerly a research and development chef with Gaggan Anand, the chef launched Resonance’s first tasting menu last year.
 
The 10-course tasting menu also includes a wine pairing (B4,500) and a tea pairing (B1,500).
