- A great quality pasta. This is essential. If you have quality pasta then you have a good pasta dish. Get grano duro (roughly translated as “tough grain”) quality pasta, it’s the best. Of course, if you can make your own then, this only adds to your dish.
- Rock salt is very important. Try the salt from Samut Sakhorn—it’s better quality than normal salt. When you boil the water to cook your pasta, it should be salty and using rock salt adds a more mineral flavor.
- Fresh, fresh, fresh ingredients. From rosemary to basil to meat, the freshness of the basic products counts for 50% of the success of the dish.
- Get creative. When cooking you have to create from within, even when cooking for someone else. You can’t always stay inside the recipe. Why not put in new ingredients and try new things?
