For the past 30 years, Rajpal Singh has stood in the heat of Bangkok for nine hours a day selling India’s most well-known food item, samosas (B8 a piece).

What made you start selling samosas?
My father used to sell them and so I decided to take on the family business. We sell about 500 a day!

What’s the secret behind the amazing taste?
I guess because it’s our family recipe!

Can you give us the recipe of the tamarind chutney you serve your samosas with?
It’s really easy. All you need is sugar, salt, chilis and spring onions and of course concentrated tamarind juice. Mix, mix, mix and there you have it.

What else do you sell?
We also sell tikki, which are round, soft deep fried potatoes, and pakodas, which are deep fried vegetables. Everything we sell is vegetarian.

So what is your daily routine like?
Well, we prepare all the ingredients at home, mix them together and bring them here to the stand where they are rolled, shaped and then fried.

Do you cater?
Yes, even for big parties. Just call and give us a few days notice.
